Daffodil Weekend at Innisfree

Saturday, April 27th

Innisfree Gardens is considered to be one of the 50 most beautiful gardens in the world, and a must see activity during your stay. And the first weekend of the season is in April, when visitors can get a special look at thousands of daffodils in bloom, planted in 1959 and naturalizing for the past 7 decades.

A PEEK INN-SIDE SPRING: Our Spring Pea and Radish Salad

As you know, our mission at the inn is to provide you with an authentic Hudson Valley experience, and that also means creating food that is local and seasonal. This salad represents just that: radishes and tender pea shoots are one of the first crops to pop up from the Spring earth; and we celebrate them in this salad, along with a lemony dressing that tastes like the season.

 

INGREDIENTS:

DRESSING:
3 anchovy filets, finely chopped
1/2 lemon, zested and juicedd
3 tbsp olive oil
1 small garlic clove, minced
salt and pepper, to taste

SALAD:
2 cups pound sugar snap peas, strings removed, sliced crosswise
2 cups thinly sliced radishes, assorted to your taste and what’s available
2 cups pea tendrils or shoots
segments from half a lemon, chopped
1 tbps olive oil
salt and pepper to taste
2 cups of arugula or available hearty salad green (romaine, frisee, are good)

1. Whisk the dressing ingredients together to make an emulsion. Set aside.
2. Combine the peas, radishes, shoots, lemon, and olive oil and toss.
3. Season with salt and pepper, and pile on top of greens
4. Drizzle bowl with lemon-anchovy dressing.

Serves 2-3.
